•1/2 c. coconut flour (I used Red Mill)
•4 tbsp. natural, sugar-free peanut butter
•8 tbsp. canned pumpkin puree
•1/2 tsp. cinnamon
•1/4 tsp. ginger
•finely shredded coconut or powdered carob for rolling

1. Combine coconut flour, peanut butter, pumpkin, cinnamon and ginger. If the dough is a bit crumbly, add small amounts of peanut butter, working the dough in your hands to help the oil bring the dough together.

2. Break small amounts of dough off and roll into balls. Roll each ball in finely shredded coconut or powdered carob.

It’s that easy. 10 minutes, maybe 15 if you dawdle. An hour if you have tiny hands helping.
